Ingredients

  • 4 slices Thick-sliced bologna
  • 4 slices Sharp cheddar cheese
  • 4 slices Sourdough bread
  • 2 tablespoons Butter
  • 2 teaspoons Dijon mustard
  • 2 teaspoons Mayonnaise
  • 2 tablespoons Pickled jalapeños
  • 1 teaspoon Hot sauce

Directions

Step 1

Start by preheating a skillet or griddle over medium heat.

Step 2

In a small bowl, mix together Dijon mustard, mayonnaise, and hot sauce until smooth. Set aside.

Step 3

Butter one side of each slice of sourdough bread. This will be the outside of the sandwich that gets grilled.

Step 4

Spread the mustard-mayo-hot sauce mixture on the unbuttered side of all four slices of bread.

Step 5

Add a slice of cheddar cheese to two of the bread slices, on the side with the mustard mixture.

Step 6

Top each slice of cheddar cheese with two slices of thick-cut bologna. If desired, lightly sear the bologna in the hot skillet for extra flavor before adding to the sandwich.

Sprinkle pickled jalapeños evenly over the bologna slices.

Step 8

Add the remaining slices of cheddar cheese on top of the jalapeños, then place the remaining bread slices on top, butter-side out, to complete the sandwiches.

Place the sandwiches in the preheated skillet and grill for about 3-4 minutes on each side, pressing gently with a spatula to achieve a golden, crispy exterior and perfectly melted cheese.
