Ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoons cayenne pepper
  • 1 teaspoon kosher salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon lime juice
  • 0.5 cup sour cream
  • 2 tablespoons cilantro leaves
  • 2 whole green onions

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 2

Wash and scrub the sweet potatoes thoroughly, and pat them dry with a kitchen towel.

Step 3

Lightly pierce each sweet potato several times with a fork to allow steam to escape during baking.

Step 4

Rub the sweet potatoes with 1 tablespoon of olive oil and place them on the prepared baking sheet.

Step 5

Bake the sweet potatoes in the preheated oven for 45–50 minutes, or until they are soft and can easily be pierced with a fork.

Step 6

While the sweet potatoes are baking, prepare the spice mixture by combining smoked paprika, ground cumin, cayenne pepper, kosher salt, and black pepper in a small bowl.

Step 7

In a separate small bowl, mix the sour cream with lime juice. Set aside for serving.

Step 8

Once the sweet potatoes are done baking, carefully slice them open lengthwise with a knife (be cautious of the steam). Use a fork to fluff the insides slightly.

Step 9

Drizzle the remaining 1 tablespoon of olive oil over the fluffed sweet potato flesh and sprinkle evenly with the prepared spice mixture.

Step 10

Top each sweet potato with a dollop of the lime sour cream mixture, and garnish with chopped cilantro leaves and finely sliced green onions.

Step 11

Serve the Kicked Up Baked Sweet Potatoes immediately while warm, and enjoy this smoky, spicy, and tangy flavor-packed dish!
