Ingredients

  • 1 cup Whole wheat grains
  • 0.5 cup Chana dal (split chickpeas)
  • 0.5 cup Moong dal (split green gram)
  • 0.5 cup Masoor dal (red lentils)
  • 500 grams Beef or lamb, boneless
  • 2 medium Onion, finely sliced
  • 1 tablespoon Garlic paste
  • 1 tablespoon Ginger paste
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Coriander powder
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Garam masala
  • 2 teaspoons Salt
  • 4 tablespoons Cooking oil
  • 8 cups Water
  • 0.5 cup Fresh cilantro leaves, chopped
  • 2 whole Lemon wedges

Directions

Step 1

Rinse the whole wheat grains and soak them in water for at least 4 hours or overnight for best results.

Step 2

Rinse the chana dal, moong dal, and masoor dal thoroughly. Soak them together for at least 1 hour.

Step 3

In a large pot, heat the cooking oil over medium heat. Add cumin seeds and let them sizzle for a few seconds.

Add the sliced onions and sauté until they are golden brown.

Step 5

Add garlic paste and ginger paste, and sauté for 1-2 minutes until the raw smell disappears.

Add the beef or lamb pieces to the pot and brown them evenly for about 5-7 minutes.

Stir in the coriander powder, red chili powder, turmeric powder, and salt. Mix well to coat the meat with the spices.

Drain and add the soaked wheat grains and dals to the pot, stirring well to combine with the meat and spices.

Pour in about 8 cups of water and bring to a boil. Lower the heat to a simmer, cover, and cook for about 3-4 hours.

Stir occasionally and add more water if necessary to maintain a thick porridge-like consistency.

Once the meat and grains are tender and a creamy texture is achieved, add garam masala and stir well.

Taste and adjust seasoning if necessary.

Garnish with freshly chopped cilantro leaves.
