Step 1

Pour 2 liters of full-fat milk into a heavy-bottomed pan or kadhai. A heavy-bottomed pan helps prevent the milk from burning as it reduces.

Step 2

Place the pan on medium heat and bring the milk to a gentle boil while stirring occasionally to prevent it from sticking to the bottom.

Step 3

Once the milk starts boiling, reduce the heat to low or medium-low. Stir frequently and ensure you scrape the sides of the pan where milk solids tend to stick.

Step 4

As the milk reduces, it will begin to thicken. Continuously stir to prevent any burning or sticking, and keep scraping the sides to mix everything evenly.

Step 5

After about 75–90 minutes, the milk will have thickened into a dense, grainy mixture. This is the khoya. It should form a soft mass and no longer appear liquid.

Step 6

Turn off the heat and let the khoya cool completely. Transfer it to an airtight container and store in the refrigerator. It can be used immediately or stored for up to 4-5 days.
