Ingredients

  • 1 cup Basmati rice
  • 0.5 cup Split yellow moong dal (lentils)
  • 4 cups Water
  • 2 tablespoons Ghee (clarified butter)
  • 1 teaspoon Cumin seeds
  • 0.25 teaspoon Hing (asafoetida)
  • 1 teaspoon Ginger, grated
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 1 Green chili, chopped
  • 1 Carrot, diced
  • 0.5 cup Peas
  • 0.5 cup Cauliflower florets
  • 2 tablespoons Coriander leaves, chopped

Directions

Step 1

Rinse the rice and moong dal together in water until the water runs clear. Drain and set aside.

Step 2

Heat ghee in a pressure cooker over medium heat.

Step 3

Add cumin seeds and let them sizzle for a few seconds until aromatic.

Step 4

Add hing (asafoetida) and grated ginger, sauté for a few seconds.

Step 5

Add the chopped green chili and sauté for another minute.

Step 6

Stir in the diced carrots, peas, and cauliflower florets. Cook for 2-3 minutes until the vegetables start to soften.

Step 7

Add turmeric powder and mix well.

Step 8

Add the rinsed rice and dal to the cooker, stirring to combine with the vegetables and spices.

Pour in the water and add salt. Stir again to ensure the ingredients are mixed well.

Secure the lid on the pressure cooker and cook for 2 whistles on medium heat, then reduce it to low and cook for an additional 5 minutes.
