Ingredients

  • 0.5 cups Basmati rice
  • 4 cups Whole milk
  • 0.5 cups Sugar
  • 4 pods Cardamom pods
  • 10 pieces Almonds
  • 10 pieces Cashews
  • 2 tablespoons Golden raisins
  • 1 teaspoons Ghee (clarified butter)
  • 0.25 teaspoons Saffron strands
  • 0.5 teaspoons Rose water (optional)
  • 2 tablespoons Pistachios (for garnish)

Directions

Step 1

Rinse the basmati rice thoroughly under cold water until the water runs clear.

Step 2

Soak the rice in water for 20 minutes. Drain and set aside.

Step 3

In a heavy-bottomed saucepan, bring the milk to a gentle boil over medium heat. Stir occasionally to prevent it from sticking to the bottom.

Step 4

Reduce the heat to low and add the drained rice to the milk. Stir well.

Step 5

Cook the rice and milk mixture on low heat, stirring frequently, until the rice becomes soft and the milk thickens (about 35-40 minutes).

Step 6

While the rice is cooking, crush the cardamom pods and set aside. Chop the almonds and cashews into small pieces.

Step 7

In a small skillet, melt the ghee over low heat. Add the chopped nuts and raisins. Sauté for 1-2 minutes until golden and fragrant. Set aside.

Step 8

Once the rice and milk mixture achieves a creamy consistency, add the sugar and mix well until dissolved.

Step 9

Add the crushed cardamom pods, saffron strands, and the sautéed nuts and raisins. Stir to combine.

Step 10

If using rose water, add it now and mix gently.

Step 11

Cook for another 5 minutes to let all the flavors meld together.

Step 12

Remove the kheer from the heat and let it cool slightly. It will thicken further as it cools.

Step 13

Garnish with chopped pistachios before serving. Serve warm or chilled as desired.
