Ingredients

  • 0.5 cup Basmati rice
  • 4 cups Whole milk
  • 1 cup Heavy cream
  • 0.5 cup Granulated sugar
  • 4 Green cardamom pods
  • 0.25 teaspoon Saffron strands
  • 2 tablespoons Almonds (sliced or slivered)
  • 2 tablespoons Cashews (chopped)
  • 2 tablespoons Golden raisins
  • 1 teaspoon Rose water (optional)

Directions

Step 1

Rinse the basmati rice thoroughly under running water until the water runs clear to remove excess starch.

Step 2

Lightly crush the green cardamom pods to release their seeds.

Step 3

Grease the inside of the slow cooker lightly with butter or oil to prevent sticking.

Step 4

Add the rinsed basmati rice, whole milk, and heavy cream into the slow cooker.

Step 5

Stir in the sugar and add the crushed cardamom pods and saffron strands.

Step 6

Set the slow cooker to low heat and cook for 3.5 hours, stirring every hour to prevent rice from clumping and to avoid burning at the edges.

Step 7

After 3.5 hours, add the almonds, cashews, and golden raisins, and stir well.

Step 8

Continue cooking for another 30 minutes to allow the nuts and raisins to soften and blend into the kheer.

Step 9

If using, stir in the rose water just before serving for an aromatic touch.

Step 10

Serve warm or chilled, garnished with additional nuts or saffron strands if desired.
