Ingredients

  • 2 cups Whole wheat flour
  • 2 tablespoons Semolina (Rava)
  • 4 tablespoons Ghee (clarified butter)
  • 1 teaspoon Salt
  • 0.5 teaspoon Carom seeds (Ajwain)
  • 1 tablespoon Oil
  • 0.75 cup Water

Directions

Step 1

In a large mixing bowl, combine whole wheat flour, semolina, salt, and carom seeds.

Step 2

Add the ghee and mix it into the dry ingredients using your fingertips until the mixture resembles breadcrumbs. This helps to create the flaky texture of the roti.

Step 3

Gradually add water, a little at a time, and knead the mixture into a firm dough. The dough should be tight and not too soft.

Step 4

Cover the dough with a damp cloth and let it rest for 15 minutes.

Step 5

Divide the dough into 6-8 equal portions and roll each portion into a ball.

Step 6

On a lightly floured surface, take one dough ball and roll it into a disc about 5-6 inches in diameter. Do not make it too thin, as Khasta Roti needs a slightly thicker texture.

Step 7

Heat a tawa or griddle over medium heat and add a few drops of oil to grease it lightly.

Step 8

Place the rolled roti onto the hot tawa and cook for about 1-2 minutes until you see bubbles forming on the surface.

Step 9

Flip the roti and cook for another 1-2 minutes. Brush a little ghee on the cooked side.

Step 10

Flip the roti again and cook while pressing it gently with a spatula to ensure it cooks evenly. Repeat the process for the other side and brush with ghee, if desired.

Step 11

Repeat this process with the remaining dough balls.

Step 12

Serve the Khasta Rotis warm with your favorite curry, dal, or pickle.
