Ingredients

  • 500 grams Baby potatoes
  • 3 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Amchur (dried mango powder)
  • 0.5 teaspoon Garam masala
  • 1 teaspoon Salt
  • 2 tablespoons Fresh coriander leaves (chopped)

Directions

Step 1

Wash the baby potatoes thoroughly and boil them in salted water for 12-15 minutes or until tender. Drain and let them cool slightly.

Step 2

Once cooled, peel the potatoes (optional) and slightly flatten each potato using the back of a spoon or your palm, being careful not to break them apart completely.

Heat a large non-stick pan over medium heat and add the vegetable oil.

Once the oil is hot, add the cumin seeds and let them sizzle for about 30 seconds until aromatic.

Add the boiled and flattened potatoes to the pan in a single layer. Allow them to cook undisturbed for 4-5 minutes on one side until golden and crispy.
