Ingredients

  • 500 grams all-purpose flour
  • 1 tablespoon dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 250 milliliters warm milk
  • 60 grams unsalted butter, melted
  • 2 large egg
  • 200 grams fetа cheese, crumbled
  • 200 grams mozzarella cheese, shredded
  • 200 grams Suluguni cheese, crumbled or chopped
  • 1 tablespoon olive oil
  • 1 large egg yolk for topping
  • 1 tablespoon water

Directions

Step 1

In a small bowl, combine the yeast, sugar, and warm milk. Stir gently, and let it sit for about 10 minutes until frothy.

Step 2

In a large mixing bowl, mix the flour and salt. Add the yeast mixture, melted butter, and one of the eggs. Mix until a dough forms.

Step 3

Transfer the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Lightly oil a large bowl with olive oil, place the dough inside, cover with a clean kitchen towel, and let it rise in a warm spot for about 1-1.5 hours or until doubled in size.

In a medium bowl, combine the feta, mozzarella, and Suluguni cheese. Mix well and set aside.

Preheat your oven to 240°C (465°F). Line a baking sheet with parchment paper.

Once the dough has risen, punch it down and divide it into two equal parts. Roll out each piece into a rough oval shape, approximately 12 inches long.

Transfer the rolled-out dough to the prepared baking sheet. Spread half of the cheese mixture along the edges of each dough oval, then roll the edges over the cheese to create a boat shape, pinching and twisting the ends to seal.

Fill each boat's center with the remaining cheese mixture, leaving a slight well in the middle for the egg later.

Beat the remaining egg yolk with a tablespoon of water and brush the dough edges with this mixture.

Step 11

Bake in the preheated oven for 15 minutes. Remove the khachapuri from the oven and carefully crack an egg into the center of each bread. Return to the oven for an additional 5 minutes or until the egg is just set.

Step 12

Remove from the oven and serve warm. Optionally, mix the egg into the hot cheese before serving.
