Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons lime juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 1 cup pineapple, finely diced
  • 1 cup mango, finely diced
  • 0.5 cup red bell pepper, finely diced
  • 0.25 cup red onion, finely diced
  • 1 unit jalapeño, finely minced (optional)
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons lime juice
  • 0.25 teaspoon salt

Directions

Step 1

In a small bowl, combine olive oil, minced garlic, lime juice, fresh parsley, salt, pepper, and paprika. Mix well to create a marinade for the shrimp.

Step 2

Place the shrimp in a shallow dish or zip-top bag and pour the marinade over them. Toss to coat evenly, then cover and refrigerate for 15 minutes to allow the flavors to meld.

Step 3

While the shrimp is marinating, prepare the pineapple mango relish. In a medium bowl, combine the diced pineapple, diced mango, diced red bell pepper, diced red onion, minced jalapeño (if using), chopped cilantro, lime juice, and salt. Stir until well mixed. Set aside or refrigerate until ready to serve.

Step 4

Heat a large skillet over medium-high heat. Add the marinated shrimp to the pan in a single layer, discarding any excess marinade. Cook for 2-3 minutes per side, or until the shrimp are pink and opaque, being careful not to overcook.

Step 5

Remove the shrimp from the skillet and transfer to a serving platter.

Step 6

Top the shrimp with a generous spoonful of the pineapple mango relish and serve immediately.

Step 7

Accompany with steamed rice, quinoa, or a mixed green salad for a complete meal.
