Ingredients

  • 200 grams Graham cracker crumbs
  • 85 grams Unsalted butter, melted
  • 50 grams Granulated sugar (for crust)
  • 225 grams Cream cheese, softened
  • 400 grams Sweetened condensed milk
  • 300 ml Heavy whipping cream
  • 30 grams Powdered sugar
  • 120 ml Key lime juice
  • 10 grams Key lime zest (plus extra for garnish)
  • 7 grams Gelatin powder
  • 45 ml Cold water
  • 100 ml Whipped cream (optional, for garnish)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line the bottom of a 9-inch (23 cm) springform pan with parchment paper.

Step 2

In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until the mixture resembles wet sand. Press it evenly into the bottom of the prepared pan to form the crust.

Bake the crust in the preheated oven for 8-10 minutes until lightly golden. Remove and let it cool completely.

In a small bowl, combine the gelatin powder and cold water. Let the gelatin bloom for 5 minutes, then heat it gently in the microwave or over a double boiler until fully dissolved. Set aside to cool slightly.
