  • 170 grams unsalted butter
  • 65 grams granulated sugar
  • 240 grams all-purpose flour
  • 120 ml key lime juice
  • 1 tablespoon lime zest
  • 4 large egg yolks
  • 396 grams sweetened condensed milk
  • 15 grams powdered sugar

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line a 9x9-inch (23x23 cm) baking pan with parchment paper, leaving some overhang for easy removal later.

Step 2

In a medium bowl, cream together the softened butter and granulated sugar until smooth and fluffy. Gradually mix in the flour until a dough forms.

Press the dough evenly into the bottom of the prepared pan to form the crust. Use the back of a spoon or your fingertips to press it down firmly.

Bake the crust in the preheated oven for 15 minutes, or until lightly golden around the edges. Remove from the oven and allow to cool slightly while preparing the filling.
