Ingredients

  • 3 medium-sized (peeled and diced into 1-inch cubes) Potatoes
  • 1 medium head (cut into small florets) Cauliflower
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 1 medium (finely chopped) Onion
  • 4 cloves (minced) Garlic
  • 1 tablespoon (grated) Ginger
  • 2 medium (finely chopped) Tomatoes
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Garam masala
  • 1 teaspoon (or to taste) Salt
  • 2 tablespoons (chopped, for garnish) Cilantro
  • 0.25 cup Water

Directions

Step 1

Heat the vegetable oil in a large skillet or pan over medium heat.

Step 2

Add the cumin seeds and let them sizzle for 30 seconds or until aromatic.

Step 3

Add the chopped onions and sauté until they turn golden brown, about 5-7 minutes.

Step 4

Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes.

Step 5

Add the chopped tomatoes and cook until they break down and form a thick paste, about 5-6 minutes.

Step 6

Stir in the turmeric powder, ground coriander, ground cumin, and red chili powder. Cook for 1 minute to toast the spices.

Step 7

Add the diced potatoes and cauliflower florets to the pan, mixing well to coat them in the spice mixture.

Step 8

Pour in 1/4 cup of water, cover with a lid, and reduce the heat to low. Let it cook for 20-25 minutes, stirring occasionally, until the potatoes and cauliflower are tender.

Step 9

Uncover the pan and sprinkle in the garam masala and salt. Mix well and cook for another 2 minutes.

Step 10

Turn off the heat, garnish with chopped cilantro, and serve hot with naan, roti, or rice.
