  • 500 g ground lamb (or ground beef for Cottage Pie)
  • 1 medium yellow onion, finely diced

  • 2 celery stalk, finely diced
  • 2 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 250 ml beef or lamb stock
  • 150 g frozen peas
  • 100 g frozen corn (optional)
  • 1 kg russet potatoes, peeled and diced
  • 100 g unsalted butter
  • 125 ml milk (warm)
  • 100 g cheddar cheese, shredded
  • 1 tbsp olive oil
  • 1 to taste salt
  • 1 to taste black pepper
  • 1 tsp fresh thyme leaves (optional)

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

In a large skillet over medium heat, heat the olive oil. Add the diced onion, carrot, and celery. Sauté for 5-7 minutes until softened.

Step 3

Add the minced garlic and cook for an additional minute until fragrant.

Step 4

Push the vegetables to one side of the skillet and add the ground lamb (or beef). Cook, breaking it into smaller pieces, until browned and no longer pink, about 5-7 minutes.

Stir in the tomato paste, Worcestershire sauce, fresh thyme (if using), salt, and black pepper. Cook for 2 minutes, allowing the tomato paste to caramelize slightly.

Pour in the beef or lamb stock and bring the mixture to a simmer. Let it cook for 10 minutes, allowing the flavors to meld and the sauce to reduce slightly. Stir in the frozen peas (and corn, if using), then remove the skillet from heat.

Spoon the mashed potatoes over the meat filling, spreading them out evenly to cover the surface. Use a fork to create decorative ridges on top to help with browning.

Place the dish on the middle rack of your preheated oven and bake for 20-25 minutes or until the top is golden and slightly crispy.
