Ingredients

  • 200 grams Rice noodles
  • 300 grams Firm tofu
  • 100 grams Bean sprouts
  • 1 medium Cucumber
  • 100 grams Peanuts
  • 2 pieces Garlic cloves
  • 2 tablespoons Palm sugar
  • 3 tablespoons Sweet soy sauce
  • 1 piece Lime
  • 0.5 teaspoon Salt
  • 2 tablespoons Cooking oil
  • 0.5 cup Water

Directions

Step 1

Soak the rice noodles in hot water for about 10 minutes until soft, then drain and set aside.

Step 2

Cut the tofu into small cubes and heat 2 tablespoons of cooking oil in a pan over medium heat.

Step 3

Fry the tofu cubes until golden brown on all sides, then remove from the pan and drain on paper towels.

Step 4

In a dry pan, roast the peanuts over medium heat for about 5 minutes until lightly browned. Allow them to cool, then grind them into a coarse powder using a food processor or mortar and pestle.

Step 5

Peel and thinly slice the cucumber. Set aside.

Step 6

To make the peanut sauce, combine the ground peanuts, garlic cloves, palm sugar, sweet soy sauce, salt, lime juice from one lime, and 0.5 cup of water in a blender. Blend until smooth and adjust seasoning to taste.

Step 7

In a large mixing bowl, combine the prepared rice noodles, bean sprouts, fried tofu, and sliced cucumber.

Step 8

Pour the peanut sauce over the noodle mixture and gently toss to combine.

Step 9

Serve the ketoprak immediately, garnished with additional peanuts or lime wedges if desired.
