Ingredients

  • 4 medium-sized Zucchini
  • 2 tablespoons Olive oil
  • 3 large Garlic cloves
  • 1 large Lemon
  • 1 quarter cup Parmesan cheese (grated)
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 teaspoons Red pepper flakes (optional)

Directions

Step 1

Wash and dry the zucchinis. Using a spiralizer or julienne peeler, create zucchini noodles (zoodles) and set them aside.

Step 2

Mince the garlic cloves and zest the lemon. Then cut the lemon in half and juice it, setting both zest and juice aside.

Step 3

Heat olive oil in a large, non-stick skillet over medium heat.

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to let it burn.
