In a large mixing bowl, combine almond flour, coconut flour, xanthan gum, baking powder, and salt. Stir well to ensure everything is evenly distributed.
In a separate smaller bowl, whisk together the eggs, apple cider vinegar, and water until smooth.
Slowly incorporate the wet ingredients into the dry ingredients. Use a spatula to mix until a dough begins to form. Knead the dough with your hands a few times until smooth and slightly elastic.
Divide the dough into 4 equal portions. Roll each portion into a long cylinder, about 6 inches in length. Flatten each cylinder slightly to form an oval shape, about 1 inch wide.
Place two ovals on top of each other and gently press them together down the center using a chopstick to create the signature You Tiao look. Repeat with the remaining portions.
