  • 1 medium Red bell pepper
  • 1 medium Zucchini
  • 2 cups Spinach
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper
  • 2 tablespoons Cilantro
  • 1 tablespoon Lemon juice

Directions

Step 1

Cut the cauliflower into florets and pulse in a food processor until it resembles rice grains. Do this in small batches to avoid overprocessing.

Step 2

Mince the garlic. Dice the red bell pepper and zucchini into small pieces. Roughly chop the spinach and cilantro.

Step 3

Heat olive oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the diced red bell pepper and zucchini to the skillet. Cook for 3-4 minutes until slightly softened.
