  • 1 cup canned black soybeans (rinsed and drained)
  • 0.25 cup vegetable broth
  • 2 tablespoons fresh cilantro, chopped
  • 2 wedge lime wedges (optional, for serving)

Directions

Step 1

Cut the cauliflower into florets and use a food processor to pulse them into rice-sized grains. Alternatively, use pre-riced cauliflower for convenience.

Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and cook for 3-4 minutes, until softened.
