Ingredients

  • 4 cups Cauliflower rice
  • 2 large Eggs
  • 2 tablespoons Coconut oil
  • 2 cloves Garlic
  • 0.5 cup White onion
  • 2 stalks Green onions
  • 2 tablespoons Soy sauce (or coconut aminos for keto/gluten-free)
  • 1 teaspoon Sesame oil
  • 1 cup Cooked chicken (optional, diced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Pepper

Directions

Step 1

Prepare the cauliflower rice if not using pre-riced cauliflower. Wash and dry a medium-sized head of cauliflower, cut it into florets, and pulse it in a food processor until it resembles rice grains.

Step 2

Finely mince the garlic, dice the white onion, and chop the green onions. Set aside.

Step 3

In a small bowl, beat the eggs and set aside.

Step 4

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat. Once hot, add the beaten eggs and scramble them. Cook until just set, then remove the eggs from the skillet and set aside.

Step 5

In the same skillet, add the remaining 1 tablespoon of coconut oil. Once hot, add the garlic and diced white onion. Sauté for 2-3 minutes, until fragrant and the onion is translucent.

Step 6

Add the cauliflower rice to the skillet, stirring well to combine. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender but not mushy.

Add the soy sauce (or coconut aminos), sesame oil, cooked chicken (if using), and scrambled eggs to the skillet. Stir everything to combine and heat through for 2-3 minutes.

Season with salt and pepper to taste. Remove from heat and garnish with chopped green onions.
