Ingredients

  • 170 grams Sugar-free white chocolate chips
  • 60 ml Heavy cream
  • 30 grams Butter (unsalted)
  • 1 teaspoon Vanilla extract
  • 30 grams Almond flour (finely ground)
  • 30 grams Powdered erythritol (for rolling, optional)

Directions

Step 1

In a heatproof bowl, combine the sugar-free white chocolate chips and heavy cream.

Step 2

Place the bowl over a pot of simmering water (double boiler method) and stir continuously until the chocolate is fully melted and smooth.

Step 3

Add the unsalted butter to the melted chocolate mixture and stir until the butter is completely incorporated.

Step 4

Stir in the vanilla extract and almond flour until the mixture becomes thick and smooth.

Step 5

Remove the bowl from heat and let the mixture cool to room temperature, then cover and refrigerate for at least 2 hours or until firm.

Step 6

Once the mixture is firm, use a small spoon or melon baller to scoop out portions and roll them into small truffle-sized balls with your hands.

Step 7

If desired, roll each truffle in powdered erythritol for a sweet, finishing coating.

Step 8

Store the truffles in an airtight container in the refrigerator for up to 1 week. Serve chilled and enjoy!
