Ingredients

  • 2 tablespoons Butter
  • 3 Garlic cloves, minced
  • 1 medium Yellow onion, finely chopped
  • 4 cups Watercress (tough stems removed)
  • 3 cups Chicken or vegetable broth (low-carb and unsweetened)
  • 0.5 cup Heavy cream
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg (optional, for garnish)

Directions

Step 1

Heat a large saucepan or Dutch oven over medium heat and melt the butter.

Step 2

Add the minced garlic and chopped onion. Sauté for 3-4 minutes until the onion becomes soft and translucent.

Step 3

Add the watercress to the pot, stirring for 2-3 minutes until it begins to wilt.

Step 4

Pour in the chicken or vegetable broth. Bring the mixture to a gentle boil, then reduce the heat and let it simmer for about 10 minutes to allow the flavors to meld.

Step 5

Use an immersion blender in the pot (or transfer the soup to a countertop blender in batches) to puree until smooth.

Step 6

Stir in the heavy cream, salt, and black pepper. Let the soup warm through for another 2-3 minutes, but do not boil.

Step 7

Taste and adjust seasoning if needed. Optionally, sprinkle a pinch of nutmeg on top for an aromatic garnish.

Step 8

Serve warm and enjoy!
