Ingredients

  • 1.5 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoons Salt
  • 0.33 cups Hot water
  • 0.5 pounds Ground pork
  • 1 tablespoon Soy sauce (or tamari for gluten-free)
  • 1 teaspoon Minced garlic
  • 1 teaspoon Grated ginger
  • 2 tablespoons Chopped scallions
  • 1 teaspoon Sesame oil
  • 1 large Egg (for sealing wrappers)
  • 0.25 cups Avocado oil or coconut oil (for frying)

Directions

Step 1

In a mixing bowl, combine almond flour, coconut flour, xanthan gum, and salt. Mix thoroughly.

Step 2

Slowly pour the hot water into the dry mixture while stirring continuously to form a dough.

Step 3

Once the dough comes together, knead it gently for 1-2 minutes until it’s smooth. Cover the dough with a damp cloth and let it rest for 10 minutes.

Step 4

Meanwhile, prepare the filling. In a separate bowl, combine ground pork, soy sauce, minced garlic, grated ginger, chopped scallions, and sesame oil. Mix well until fully combined.

Step 5

Divide the dough into small portions and roll each portion into a thin circle (about 3 inches in diameter) using a rolling pin. Generously flour a surface with almond flour to prevent sticking.

Step 6

Place a teaspoon of the filling in the center of each circle.

Step 7

Beat the egg and use it to lightly brush the edges of the wrapper. Fold the wrapper over the filling to form a half-moon shape, pressing to seal the edges completely.

Step 8

Heat avocado oil or coconut oil in a skillet over medium heat. Once hot, fry the wontons in batches for 2-3 minutes per side, or until golden brown and crispy.

Step 9

Remove wontons from the skillet and drain any excess oil on paper towels.

Step 10

Serve warm with your favorite keto-friendly dipping sauce, such as tamari or a spicy chili oil.
