Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 0.333 cup Granulated erythritol (or your favorite keto-friendly sweetener)
  • 1 teaspoon Baking powder
  • 0.125 teaspoon Salt
  • 3 large Eggs
  • 4 tablespoons Unsalted butter (melted)
  • 1 teaspoon Vanilla extract
  • 3 tablespoons Heavy cream
  • 0.5 teaspoon Cinnamon (optional, for flavor)

Directions

Step 1

Preheat your waffle iron and lightly grease it with nonstick cooking spray or melted butter.

Step 2

In a medium bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, salt, and cinnamon (if using).

Step 3

In a separate small bowl, beat the eggs. Then add the melted butter, vanilla extract, and heavy cream, whisking until well combined.

Step 4

Gradually fold the wet ingredients into the dry ingredients, mixing until a smooth yet slightly thick batter forms.

Step 5

Spoon approximately 1 to 2 tablespoons of batter onto the center of your waffle iron for each cookie, being careful not to spread it too thin.

Step 6

Close the waffle iron and cook for about 2-4 minutes, or until the waffle cookies are golden brown and set.

Step 7

Carefully remove the waffle cookies with a spatula and transfer them to a cooling rack.

Step 8

Repeat the process with the remaining batter.

Step 9

Serve the waffle cookies warm or allow them to cool completely for a crispier texture. Store leftovers in an airtight container at room temperature for up to 3 days.
