Ingredients

  • 8 sheets Keto spring roll wrappers (made with coconut flour or almond flour)
  • 16 pieces Shrimp, cooked and deveined
  • 8 pieces Lettuce leaves
  • 1 medium Cucumber, julienned
  • 0.5 medium Carrots, julienned
  • 16 leaves Fresh mint leaves
  • 8 sprigs Fresh cilantro
  • 1 small Avocado, sliced
  • 2 tablespoons Roasted peanuts, crushed (optional)
  • 2 tablespoons Fish sauce
  • 1 tablespoon Rice vinegar (or keto-friendly apple cider vinegar)
  • 1 tablespoon Lime juice
  • 1 teaspoon Granulated erythritol (or preferred keto-friendly sweetener)
  • 1 clove Garlic, minced
  • 0.5 piece Red chili, finely chopped (optional)

Directions

Step 1

Prepare all the filling ingredients: cook and devein the shrimp, wash the lettuce, julienne the cucumber and carrot, slice the avocado, and set the fresh herbs aside.

Step 2

Lay out the keto spring roll wrappers on a flat surface. If using coconut or almond flour-based wrappers, make sure they are pliable by warming them slightly if needed.

Step 3

Start assembling the nem by placing one lettuce leaf in the center of each wrapper.

Step 4

Arrange 2 shrimp, a few cucumber and carrot sticks, a slice of avocado, 2 mint leaves, and 1 sprig of cilantro on top of the lettuce.

Step 5

If desired, sprinkle a small amount of crushed roasted peanuts for texture.

Step 6

To roll the nem, fold the bottom of the wrapper over the filling, fold in the sides, and then roll it tightly until sealed. Repeat with the remaining wrappers and filling ingredients.

Step 7

To make the dipping sauce, combine fish sauce, rice vinegar, lime juice, erythritol, minced garlic, and optional chopped red chili in a small bowl. Stir until erythritol dissolves completely.

Step 8

Serve the nem on a platter with the dipping sauce on the side. Enjoy fresh!
