  • 1 medium (sliced) Avocado
  • 2 cups Spinach
  • 1 tablespoon Olive oil
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Smoked paprika
  • 0.25 teaspoons Cumin
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 cup Sour cream
  • 2 tablespoons (chopped, optional) Fresh cilantro

Directions

Step 1

Preheat a large, non-stick skillet over medium heat.

Step 2

Sprinkle 1 cup of shredded cheddar cheese evenly across the skillet to form a circular cheese tortilla. Let it melt and cook until the edges are crispy, about 2-3 minutes. Carefully remove the cheese tortilla and set it aside. Repeat with the remaining cheese to make a second tortilla.
