Ingredients

  • 12 pieces Bacon strips
  • 12 pieces Large eggs
  • 1 cup Spinach leaves
  • 0.5 cup Cherry tomatoes
  • 0.5 cup Bell pepper (diced)
  • 0.5 cup Shredded cheese (e.g., cheddar or mozzarella)
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with cooking spray or line with silicone muffin molds.

Step 2

Place one bacon strip into each muffin cup, wrapping it around the edge to form a ring. If the bacon strip is too long, trim it to fit neatly.

Step 3

In a small bowl, combine the chopped spinach, diced cherry tomatoes, and diced bell pepper.

Step 4

Evenly distribute the vegetable mixture into the center of each bacon-lined cup.

Step 5

Sprinkle a small amount of shredded cheese on top of the vegetables in each muffin cup.

Step 6

Crack one egg into each cup, taking care not to spill over the edges. Season each egg with a pinch of salt and black pepper.

Step 7

Bake in the preheated oven for 18-20 minutes, or until the egg whites are set but the yolks are still slightly runny (or fully set, depending on your preference).

Step 8

Remove the muffin tin from the oven and allow the keto veggie bacon egg cups to cool for 2-3 minutes.

Step 9

Carefully remove each egg cup from the muffin tin using a spoon or butter knife and serve warm. Enjoy!
