Ingredients

  • 4 medium-sized celery stalks
  • 2 medium-sized zucchini
  • 2 cups, shredded green cabbage
  • 1 cup, chopped broccoli stems
  • 3 cloves, minced garlic cloves
  • 1 cup, chopped fresh parsley
  • 5 sprigs fresh thyme
  • 2 leaves bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon apple cider vinegar
  • 12 cups water

Directions

Step 1

Heat the olive oil in a large stockpot over medium heat.

Add the celery, zucchini, green cabbage, broccoli stems, and garlic to the pot. Sauté the vegetables for about 5-7 minutes until slightly softened and fragrant.
