Ingredients

  • 4 cups cauliflower rice
  • 1 cup cooked ham, diced
  • 1 medium zucchini, diced
  • 1 medium red bell pepper, diced
  • 0.5 cup frozen peas
  • 2 large eggs, beaten
  • 3 tablespoons soy sauce (or coconut aminos for stricter keto)
  • 1 tablespoon sesame oil
  • 2 tablespoons olive oil (or avocado oil)
  • 2 stalks green onion, sliced
  • 2 cloves garlic, minced
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon salt

Directions

Step 1

In a large skillet or wok, heat 1 tablespoon of olive oil over medium heat.

Step 2

Add the diced zucchini and red bell pepper to the skillet. Sauté for 4–5 minutes, stirring occasionally, until they begin to soften.

Step 3

Add the minced garlic and sauté for an additional 30 seconds until fragrant. Remove the vegetables from the skillet and set them aside.

Step 4

In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the beaten eggs and scramble them until fully cooked. Transfer the scrambled eggs to the plate with the sautéed vegetables.

Step 5

Add the sesame oil to the skillet, then stir in the diced ham. Cook for 2–3 minutes, allowing the ham to brown slightly.

Step 6

Add the cauliflower rice to the skillet with the ham. Stir frequently and cook for about 5 minutes until the cauliflower rice is tender but not mushy.

Step 7

Return the cooked vegetables and scrambled eggs to the skillet. Add the frozen peas, soy sauce (or coconut aminos), salt, and ground black pepper, stirring well to combine.

Step 8

Cook for another 2–3 minutes until everything is heated through and the flavors are well combined.

Step 9

Remove the skillet from the heat and garnish with sliced green onions.

Step 10

Serve immediately and enjoy this delicious keto-friendly vegetable and ham fried rice!
