Ingredients

  • 2 cups Almond flour
  • 1 teaspoon Baking powder
  • 2 tablespoons Psyllium husk powder
  • 3 large Eggs
  • 0.5 cup Unsweetened almond milk
  • 2 tablespoons Butter
  • 1 cup Cauliflower florets
  • 2 tablespoons Coconut flour
  • 1 teaspoon Ginger garlic paste
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Cumin seeds
  • 2 tablespoons Coriander leaves (chopped)
  • 1 teaspoon Salt
  • 0.25 cup Avocado oil (for frying)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine almond flour, baking powder, and psyllium husk powder. Mix well.

Step 3

Add eggs, almond milk, and melted butter to the dry ingredients. Stir until a dough forms.

Step 4

Shape the dough into four small bun shapes and place them on the prepared baking sheet. Bake for 12-15 minutes or until golden brown.

Step 5

Meanwhile, steam the cauliflower florets until soft. Mash them into a smooth paste.

Step 6

In a skillet, heat 1 tablespoon of avocado oil and add cumin seeds. Once they splutter, add ginger garlic paste and sauté until aromatic.

Add turmeric powder, red chili powder, salt, and mashed cauliflower. Mix well and cook for 2-3 minutes.

Step 8

Sprinkle chopped coriander leaves into the mixture and bind the filling with coconut flour. Allow it to cool slightly.

Divide the cauliflower mixture into four portions and shape each into a small patty.

Step 10

In the same skillet, heat the remaining avocado oil and shallow fry the patties until golden and crisp on both sides.

Step 11

Once the buns are baked and cooled slightly, slice them in half horizontally.

Step 12

Place a cauliflower patty between each bun to assemble the Vada Pav.

Step 13

Serve warm, optionally with keto-friendly chutney or sugar-free ketchup on the side.
