Ingredients

  • 1 lb Ground turkey
  • 1 large head Cauliflower florets
  • 2 tbsp Olive oil
  • 3 cloves Garlic, minced
  • 1 small Yellow onion, diced
  • 2 stalks Celery, finely chopped
  • 1 small Carrot, finely chopped
  • 1 tbsp Tomato paste
  • 1 cup Beef or chicken broth
  • 1 tsp Worcestershire sauce
  • 1 tsp Dried thyme
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Butter, unsalted
  • 2 tbsp Heavy cream
  • 0.5 cup Cheddar cheese, shredded (optional)
  • 2 tbsp Parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Prepare the cauliflower topping: Steam or boil the cauliflower florets until fork-tender, about 8-10 minutes. Drain well and set aside.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the diced onion, celery, and carrot to the skillet. Cook for 5-7 minutes, stirring occasionally, until softened.

Push the vegetables to one side of the skillet and add the ground turkey to the empty side. Cook, breaking it apart with a spoon, until fully browned, about 6-8 minutes.

Stir in the tomato paste, beef or chicken broth, Worcestershire sauce, dried thyme, salt, and black pepper. Let the mixture simmer for 8-10 minutes, reducing slightly.

While the turkey mixture simmers, prepare the cauliflower mash: Transfer the cooked cauliflower to a food processor or blender along with butter, heavy cream, and a pinch of salt and pepper. Blend until smooth and creamy.

If using, stir half of the shredded cheddar cheese into the mashed cauliflower. Set aside.

Step 9

Pour the turkey mixture into an even layer in a 9-inch baking dish.

Spread the cauliflower mash evenly on top of the turkey mixture. If desired, sprinkle the remaining shredded cheddar cheese over the mash.

Bake in the preheated oven for 20 minutes, or until the topping is golden and bubbling.

Remove from the oven and let cool for 5 minutes. Garnish with chopped parsley and serve warm.
