Ingredients

  • 1 cup Cauliflower rice
  • 0.25 cup Unsweetened coconut milk (canned)
  • 1 tablespoon Chia seeds
  • 1 teaspoon Erythritol or monk fruit sweetener
  • 0.5 whole Avocado
  • 0.5 cup Frozen avocado chunks
  • 0.25 cup Frozen unsweetened mango chunks
  • 0.25 cup Frozen unsweetened pineapple chunks
  • 1 tablespoon Unsweetened shredded coconut
  • 1 tablespoon Macadamia nuts (chopped)
  • 2 tablespoons Raspberries (fresh or frozen)

Directions

Step 1

In a small saucepan over low heat, warm the cauliflower rice with the coconut milk, stirring occasionally, until just tender (about 3-5 minutes). Do not let the mixture boil.

Step 2

Remove the cauliflower rice from heat and stir in the chia seeds and erythritol or monk fruit sweetener. Let it cool for a few minutes.
