Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Xanthan gum
  • 2 Eggs
  • 1 cup Mozzarella cheese (shredded)
  • 3 tablespoons Butter (melted)
  • 0.5 teaspoon Garlic powder (optional)
  • 6 slices Sucuk (Turkish sausage, thinly sliced) or pepperoni
  • 0.5 cup Cheddar cheese (sliced or grated)
  • 1 tablespoon Butter (for grilling)

Directions

Step 1

Preheat oven to 350°F (175°C) and line a small baking tray with parchment paper.

Step 2

In a mixing bowl, combine almond flour, coconut flour, baking powder, xanthan gum, and garlic powder (if using).

Step 3

Add eggs, shredded mozzarella cheese, and melted butter to the dry ingredients. Mix well until a dough forms.

Step 4

Place the dough on the prepared tray and flatten it into a rectangular shape about 1/2 inch thick. Bake for 10-12 minutes or until golden and firm to the touch.

Step 5

Remove the bread from the oven and let it cool slightly. Slice it into two equal pieces to form the base and top of the toast.

Step 6

Preheat a non-stick skillet or a sandwich press over medium heat. Add 1 tablespoon of butter if using a skillet.

Step 7

Assemble the tost: Place slices of cheddar cheese and sucuk (or pepperoni) between the two bread slices.

Step 8

Grill the assembled tost in the skillet or sandwich press for 2-3 minutes per side, or until the cheese is melted and the bread is golden and crisp.

Step 9

Slice the toast in half and serve warm with pickles or a side salad for a truly Turkish experience.
