Ingredients

  • 2 liters Water
  • 2 pieces Unsweetened black tea bags
  • 50 grams Erythritol
  • 50 grams Rye bread-flavored keto croutons (or almond flour bread if unavailable)
  • 1 teaspoon Active dry yeast
  • 4 slices Fresh lemon slices
  • 10 leaves Fresh mint leaves
  • 5 stems (Optional) Fresh dill or parsley stems for garnish

Directions

Step 1

Boil 2 liters of water in a saucepan, remove from heat, and steep the tea bags for 10 minutes to create a strong base for the kvass. Discard the tea bags after steeping.

Step 2

Dissolve erythritol in the tea while it is still warm, stirring until fully integrated. Allow the mixture to cool to lukewarm temperature (around 35-40°C or 95-104°F).

Step 3

In a small cup, activate the yeast by mixing it with 2 tablespoons of lukewarm water and a pinch of erythritol. Let it sit for 5-10 minutes until frothy.

Step 4

Place the keto rye-flavored croutons (or almond flour bread pieces) into a large glass or ceramic fermentation jar.

Step 5

Pour the cooled tea mixture over the croutons, leaving some headspace in the jar for fermentation gases. Add the activated yeast mixture, stirring gently to combine.

Step 6

Add fresh lemon slices and mint leaves to the jar for a refreshing, aromatic flavor.

Step 7

Cover the jar with a clean cloth or cheesecloth and secure it with a rubber band. Leave the jar at room temperature (20-25°C or 68-77°F) for 24-48 hours to ferment. The longer it ferments, the stronger the flavor will develop.

After fermentation, strain the kvass through a fine-mesh sieve or cheesecloth to remove solids. Pour the liquid into clean bottles with tight-fitting lids.

Step 9

Chill the bottled kvass in the refrigerator for at least 2 hours before serving. Note that kvass can develop slight natural carbonation during this time.
