Ingredients

  • 2 cups Almond flour
  • 0.5 cups Coconut flour
  • 2 teaspoons Xanthan gum
  • 3 large Eggs
  • 2 tablespoons Olive oil
  • 2 tablespoons Water
  • 1 pound Ground beef or lamb
  • 1 medium Onion
  • 2 Garlic cloves
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Butter
  • 2 tablespoons Fresh parsley or cilantro

Directions

Step 1

In a large mixing bowl, combine almond flour, coconut flour, and xanthan gum.

Step 2

Add the eggs, olive oil, and water to the dry ingredients and mix until a smooth, pliable dough forms. If the dough feels too dry, add a teaspoon of water at a time until desired consistency is reached.

Step 3

Wrap the dough in plastic wrap and let it rest at room temperature for 15 minutes.

Step 4

Meanwhile, prepare the filling by finely chopping the onion and garlic, and mixing them with the ground beef or lamb in a bowl.

Step 5

Add cumin, salt, black pepper, and chopped parsley or cilantro to the meat mixture. Mix thoroughly to evenly distribute the spices.

Step 6

Divide the dough into 8 equal portions. Roll out each portion between two sheets of parchment paper to form thin circles, about 4 inches in diameter.

Step 7

Place a tablespoon of the meat filling in the center of each dough circle.

Step 8

Carefully fold the dough over the filling, pinching the edges tightly to seal. Optionally, fold the ends inward to create a traditional manty shape.

Step 9

Grease the tiers of a steamer basket with butter to prevent sticking, and arrange the manty in a single layer, leaving some space between each dumpling.

Step 10

Bring a pot of water to a boil beneath the steamer basket. Once the water is boiling, place the steamer basket over the pot and cover with a lid.

Step 11

Steam the manty over medium heat for 20-25 minutes, or until the meat is fully cooked through.

Step 12

Carefully remove the manty from the steamer and serve hot, garnished with additional fresh parsley or cilantro if desired.
