Ingredients

  • 2 cups Almond flour
  • 1 tablespoon Psyllium husk powder
  • 1 tablespoon Apple cider vinegar
  • 1.5 cups Warm water
  • 1 teaspoon Salt
  • 4 large pieces Banana leaves (or parchment paper)
  • 1 roll Twine (or kitchen string)

Directions

Step 1

In a large mixing bowl, combine the almond flour, psyllium husk powder, and salt. Mix thoroughly to ensure even distribution.

Step 2

Add the apple cider vinegar to the warm water and stir.

Step 3

Slowly pour the vinegar-water mixture into the almond flour mixture while stirring continuously to form a dough. The dough should be sticky but firm enough to hold its shape.

Step 4

Divide the dough into four equal portions.

Step 5

Cut the banana leaves (or parchment paper) into large square pieces, making sure they're big enough to wrap each portion of dough.

Step 6

Place one portion of dough in the center of a banana leaf. Wrap tightly into a rectangular or round parcel, folding in the edges to create a seal. Tie securely with twine or kitchen string. Repeat for the remaining portions.

Step 7

In a large pot, bring water to a boil. Reduce the heat to a simmer and place the wrapped dough parcels into the pot. Make sure they're submerged in water; you may use a heat-safe plate to weigh them down if needed.

Step 8

Cover the pot and allow the Kenkey to simmer for 50 minutes.

Step 9

Carefully remove the parcels from the pot and let cool slightly before unwrapping.

Step 10

Serve warm with your favorite keto-friendly stew, soup, or dipping sauce!
