  • 0.5 pound Peeled shrimp
  • 1 block Firm tofu, cubed (optional, for keto-friendly tofu)
  • 4 heads Baby bok choy, halved
  • 4 cups Spinach
  • 8 ounces Enoki mushrooms
  • 4 cups Zucchini noodles (zoodles)
  • 2 cups Cauliflower florets
  • 1 cup Daikon radish, thinly sliced
  • 0.5 cup Cilantro leaves (for garnish)
  • 2 tablespoons Rice vinegar (for dipping sauce)
  • 2 tablespoons Chopped scallions (for dipping sauce)

Directions

Step 1

1. Prepare the broth by adding the chicken bone broth to a large pot or hotpot base. Bring it to a simmer on medium heat.
