Ingredients

  • 2 medium Green zucchini
  • 0.25 cup Avocado oil (or olive oil)
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Garlic powder
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Wash and dry the zucchini. Trim off the ends, then slice into 1/2-inch thick rounds.

Step 2

Heat a large skillet over medium heat and add 2 tablespoons of avocado oil. Make sure the oil covers the bottom of the pan evenly.

Step 3

Place the zucchini rounds into the skillet in a single layer. Cook for 2-3 minutes on each side until they start to soften and lightly brown. Remove from the skillet and set aside on a plate lined with paper towels.

Step 4

Using the bottom of a glass or a flat kitchen utensil, gently press each zucchini round to flatten slightly. Be careful not to press too hard; they should still hold their shape.

Step 5

Return the skillet to medium heat and add the remaining avocado oil as needed to ensure there is enough for frying.

Step 6

Place the flattened zucchini rounds back into the skillet and fry for another 2-3 minutes per side until golden and crispy.

Step 7

Transfer the cooked zucchini tostones onto a paper towel-lined plate to remove excess oil, then sprinkle with sea salt, garlic powder, and ground black pepper while they are still hot.

Step 8

Serve warm with your favorite keto-friendly dip, such as guacamole or aioli, or enjoy them on their own as a crunchy, low-carb treat.
