Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 cup Vital wheat gluten
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Olive oil (or avocado oil)
  • 0.75 cup Warm water

Directions

Step 1

In a large mixing bowl, whisk together almond flour, coconut flour, vital wheat gluten, xanthan gum, baking powder, and salt until evenly combined.

Step 2

Create a small well in the center of the dry ingredients and add olive oil followed by the warm water gradually.

Step 3

Using a spatula or your hands, mix the ingredients until a cohesive dough forms. Knead the dough lightly for about 2-3 minutes to ensure it is elastic and smooth.

Step 4

Divide the dough into 8 evenly sized balls and cover them with a damp cloth to prevent drying out.

Step 5

On a clean surface, place one dough ball between two sheets of parchment paper. Roll it out into a thin circle roughly 7-8 inches in diameter.

Step 6

Heat a non-stick skillet or griddle over medium heat. Cook the rolled-out tortilla for about 1-2 minutes on each side, or until light golden spots form. Adjust the heat as needed to avoid burning.

Step 7

Repeat the process with the remaining dough balls, rolling and cooking each one individually.

Step 8

Allow the cooked tortillas to cool slightly on a wire rack before serving. Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
