Ingredients

  • 6 cloves Fresh garlic cloves
  • 0.5 teaspoons Salt
  • 2 tablespoons Lemon juice
  • 0.75 cups Avocado oil
  • 2 tablespoons Ice water

Directions

Step 1

Peel the garlic cloves and slice them in half lengthwise to remove the germ (if present), which can make the sauce bitter.

Step 2

Add the garlic cloves and salt to a food processor or high-speed blender. Process until the garlic is minced finely and begins to look paste-like. Scrape down the sides of the bowl as needed.

Step 3

Pour in 1 tablespoon of lemon juice and process again to combine. Add another tablespoon of lemon juice, blending until the garlic paste becomes smoother.

Step 4

Begin adding the avocado oil VERY slowly in a thin, steady stream while the blender or processor is running. The slower you add the oil, the better the emulsion will form, creating the creamy texture of the toom.

Step 5

Once about half the oil has been incorporated, add 1 tablespoon of ice water to help stabilize the emulsion. Continue adding oil as slowly as possible while processing.

Step 6

Once all the oil has been added, evaluate the consistency. If it seems overly thick, add the second tablespoon of ice water and blend briefly to adjust.

Step 7

Taste the sauce and adjust seasoning if necessary (e.g., more salt or lemon juice). Blend to combine.

Step 8

Transfer the toom to an airtight container and store in the refrigerator for up to 1 week.
