  • 2 tablespoons Tomato paste (no added sugar)
  • 1 cup Diced tomatoes (canned, no added sugar)
  • 0.5 cup Chicken broth (or vegetable broth for vegetarian)
  • 1 teaspoon Sweet paprika
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (chopped)

Directions

Step 1

If using a fresh cauliflower head, cut it into florets. Pulse the florets in a food processor until they are rice-sized. If using pre-riced cauliflower, skip this step.
