Ingredients

  • 14 oz Extra-firm tofu
  • 1 medium Zucchini
  • 2 cups Broccoli florets
  • 1 medium Red bell pepper
  • 3 tbsp Coconut aminos (or tamari for gluten-free)
  • 2 tbsp Sesame oil
  • 3 units Garlic cloves, minced
  • 1 tsp Fresh ginger, grated
  • 2 tbsp Avocado oil
  • 2 units Green onions, chopped
  • 1 tsp Toasted sesame seeds
  • 0.25 tsp Red pepper flakes (optional)

Directions

Step 1

Press the tofu to remove excess moisture. Wrap the tofu block in a clean towel, place it on a plate, and set a heavy object on top. Let it sit for 15 minutes.

Step 2

Cut the pressed tofu into 1-inch cubes and set aside.

Step 3

Slice the zucchini and red bell pepper into thin strips. Set aside the vegetables along with the broccoli florets.

Step 4

In a small bowl, whisk together the coconut aminos, sesame oil, garlic, and grated ginger. Set aside.

Step 5

Heat 1 tablespoon of avocado oil in a large non-stick or cast-iron skillet over medium-high heat. Add the tofu cubes and cook for 3-4 minutes per side until golden and slightly crispy. Remove the tofu from the skillet and set aside.

Step 6

Add the remaining 1 tablespoon of avocado oil to the skillet. Toss in the sliced zucchini, broccoli, and red bell pepper. Stir-fry for about 5-6 minutes until the vegetables are tender-crisp.

Step 7

Return the cooked tofu to the skillet. Pour the sauce over the tofu and vegetables. Stir to combine and cook for another 2-3 minutes until everything is evenly coated and heated through.

Step 8

Taste and adjust seasoning if desired. Optionally, add red pepper flakes for a bit of spice.

Step 9

Garnish with chopped green onions and toasted sesame seeds before serving.
