  • 4 cups Bone broth or chicken stock
  • 2 tablespoons Coconut oil
  • 3 cloves Garlic, minced
  • 1 thumb-sized piece Ginger, julienned
  • 1 medium Onion, sliced
  • 2 small Zucchini, cubed
  • 1 medium Chayote, cubed
  • 2 cups Malunggay (Moringa leaves) or spinach
  • 2 tablespoons Fish sauce (patis)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Heat the coconut oil in a large pot over medium heat.

Step 2

Add the minced garlic, julienned ginger, and sliced onion. Sauté for 2–3 minutes until fragrant and the onions are translucent.

Add the chicken thighs or drumsticks to the pot. Sear the chicken for 3–4 minutes on each side until lightly browned.
