  • 150 grams Yellow wax beans
  • 150 grams Edamame (shelled, fresh or frozen)
  • 0.25 cup (finely diced) Red onion
  • 2 tablespoons (chopped) Fresh parsley
  • 3 tablespoons Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoons Garlic powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 teaspoon Erythritol or keto-friendly sweetener (optional)

Directions

Step 1

Trim the ends of the green beans and yellow wax beans, and cut them into bite-sized pieces.

Bring a pot of salted water to a boil. Add the green beans and yellow wax beans, and blanch them for 2-3 minutes until tender but still crisp. Remove with a slotted spoon and immediately transfer to an ice bath to stop the cooking process.
