  • 8 pieces Chicken drumsticks
  • 1 cup Coconut flour
  • 0.5 cup Unsweetened shredded coconut
  • 3 large Eggs
  • 2 tablespoons Fish sauce
  • 0.25 cup Coconut milk (unsweetened)
  • 1 teaspoon Garlic powder
  • 1 teaspoon Ground ginger
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground turmeric
  • 0.5 teaspoon Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Avocado oil

Directions

Step 1

In a large bowl, combine fish sauce and coconut milk to create a marinade.

Step 2

Add chicken drumsticks to the bowl and toss to fully coat them in the marinade. Cover and refrigerate for 1 hour (or up to 4 hours for more flavor).

Step 3

In a shallow dish, mix together the coconut flour, shredded coconut, garlic powder, ginger, paprika, turmeric, chili powder, salt, and black pepper.
