Ingredients

  • 2 pieces Chicken breast
  • 0.5 cups Almond flour
  • 0.5 cups Crushed pork rinds
  • 2 tablespoons Coconut flour
  • 2 large Eggs
  • 0.25 cups Sparkling water
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoons Paprika
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Pepper
  • 1 cups Avocado oil (or another keto-friendly oil for frying)

Directions

Step 1

Cut the chicken breasts into bite-sized strips or pieces as desired.

Step 2

In a mixing bowl, whisk together the almond flour, crushed pork rinds, coconut flour, garlic powder, onion powder, paprika, salt, and pepper. Set this dry mixture aside.

Step 3

In another bowl, beat the eggs and whisk in the sparkling water. This will help to create a light, airy batter.

Step 4

Heat the avocado oil in a deep frying pan or pot over medium heat until it reaches 350°F (175°C). Use a thermometer to ensure the oil temperature is consistent for frying.

Step 5

Dip each piece of chicken into the egg mixture, letting any excess drip off. Then coat it thoroughly in the dry almond flour mixture, pressing lightly to adhere the breading.

Step 6

Carefully place a few pieces of the coated chicken into the hot oil, making sure not to crowd the pan. Fry for 2-3 minutes on each side, or until golden brown and fully cooked (internal temperature should reach 165°F/74°C).

Step 7

Remove the chicken from the oil using a slotted spoon and place it on a plate lined with paper towels to drain excess oil.

Step 8

Repeat the frying process for the remaining chicken pieces.

Step 9

Serve the Keto Tempura Chicken warm with your favorite sugar-free dipping sauces, such as spicy mayo or low-carb teriyaki sauce.
