Ingredients

  • 6 whole Nori sheets
  • 2 cups Cauliflower rice
  • 4 tablespoons Cream cheese
  • 1 teaspoon Rice vinegar
  • 0.5 cup Sliced cucumber
  • 1 whole Sliced avocado
  • 12 pieces Cooked shrimp
  • 6 slices Smoked salmon
  • 0.25 cup Soy sauce or coconut aminos (for serving)
  • 1 teaspoon Sesame seeds (optional)
  • 1 teaspoon Prepared wasabi (optional)
  • 2 tablespoons Pickled ginger (optional)

Directions

Step 1

Begin by preparing the cauliflower rice. If using fresh cauliflower, pulse florets in a food processor until they resemble rice grains. If using pre-riced cauliflower, proceed to the next step.

Step 2

In a microwave-safe bowl, warm the cauliflower rice for 2-3 minutes to soften it. Let it cool slightly, then stir in cream cheese and rice vinegar. Mix well until combined. The cream cheese will help bind the cauliflower and give it a sticky texture similar to sushi rice.

Step 3

Lay a sheet of nori on a flat surface with the shiny side down. Place about 1/4 cup of the cauliflower rice mixture onto the top left corner of the nori. Spread it gently into a rectangle, leaving the top edge free to allow for rolling.

Add your desired fillings on top of the cauliflower rice. Start with 1-2 slices of cucumber, a slice of avocado, 1-2 pieces of shrimp or smoked salmon, and a sprinkling of sesame seeds if using.

Fold the bottom left corner of the nori up and over the fillings to start forming a cone shape. Continue rolling until it forms a tight hand roll. Use a small dab of water to seal the edge of the nori if needed.

Repeat the process with the remaining nori sheets and fillings.
