Total Time:20 mins
Servings: 2

Ingredients

  • 4 pieces Large eggs
  • 2 tablespoons Coconut oil
  • 2 small Shallots
  • 2 pieces Garlic cloves
  • 1 piece Red chili
  • 1 tablespoon Soy sauce (keto-friendly)
  • 1 teaspoon Lime juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 1 tablespoon Fresh cilantro

Directions

Step 1

Peel and thinly slice the shallots and garlic. Slice the red chili into thin rounds, removing seeds if you prefer less heat. Chop the fresh cilantro for garnish and set aside.

Step 2

Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.

Step 3

Crack the eggs gently into the skillet, one at a time, and fry them sunny-side up. Cook until the whites are set but the yolks remain runny, about 2-3 minutes. Remove the eggs carefully and set them aside on a plate.

Step 4

In the same skillet, add the remaining tablespoon of coconut oil. Lower the heat slightly and add the sliced shallots, garlic, and red chili. Sauté for 2-3 minutes until fragrant and golden brown, stirring occasionally to prevent burning.

Step 5

Add the soy sauce, lime juice, salt, and ground black pepper to the skillet. Stir well to combine and let the mixture simmer for 30 seconds to enhance the flavors.

Step 6

Carefully return the fried eggs to the skillet, spooning the sauce and aromatics over the top. Allow the eggs to absorb the sauce for about 1 minute on low heat.

Step 7

Transfer the eggs to a serving plate, ensuring they are covered with the aromatic sauce.

Step 8

Garnish with the chopped fresh cilantro and serve immediately. Enjoy your Keto Telur Goreng as-is or pair it with a side of stir-fried low-carb vegetables.
