Ingredients

  • 1 cup Taro root (peeled and diced)
  • 1.5 cups Unsweetened almond milk
  • 0.5 cups Full-fat coconut cream
  • 3 tablespoons Erythritol or monk fruit sweetener
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Xanthan gum
  • 1 cup Black tea (optional, for added flavor)
  • 0.5 cups Sugar-free tapioca pearls
  • 4 cups Water (for cooking taro and tapioca pearls)
  • 1 cup Ice cubes (optional)

Directions

Step 1

Start by preparing the diced taro. Bring 2 cups of water to a boil in a medium saucepan. Add the taro root and cook until soft and fork-tender, approximately 10-15 minutes.

Step 2

Drain the cooked taro and let it cool slightly. Then, blend it with 1 cup of unsweetened almond milk, coconut cream, 2 tablespoons of erythritol or monk fruit sweetener, and the vanilla extract until smooth and creamy.

Step 3

Optional: Brew 1 cup of black tea separately and let it cool. This can be used as a flavor base for the drink if desired.

Step 4

To thicken the taro mixture, whisk in the xanthan gum gradually until the mixture achieves a smooth, slightly thick consistency. Set aside in the refrigerator to chill.

Step 5

Meanwhile, prepare the sugar-free tapioca pearls. Bring the remaining 2 cups of water to a boil in a clean pot. Add the tapioca pearls and cook according to the package instructions (usually 5-10 minutes for sugar-free varieties). Once the pearls are cooked, rinse them in cold water and set aside.

Step 6

Assemble the drinks by dividing the cooled tapioca pearls into two glasses. Add ice cubes if desired.

Step 7

Pour the taro mixture over the tapioca pearls, filling the glass about three-quarters full. If you brewed black tea, top the glass with tea for a layered effect or mix it in for a more blended flavor.

Step 8

Sweeten to taste with the remaining sweetener if needed. Give the drink a gentle stir and serve with a wide straw for enjoying the tapioca pearls.
